2012 Priorat Crianza

Description:   Elegant “picota” (cherry) red color with ruby tonalities. A sensual aroma, deep and complex where rich vanilla and toast stand out as a product of aging in French oak, with predominant touches of ripe red fruits. It has an equilibrated palate, warm and gourmand with high tannin composition and the impressive structure of a great gustative variety as detected in its aroma. With a complex, pronounced, pleasant and long lasting finish, this wine is an excellent companion for all meats, especially game, as well as cheese and dishes with strong sauces.  With minimal time lapse between cutting and destemming, Simbolic 16 is fermented in stainless steel vats. Exhaustive temperature control and racking obtain a greater extraction of tannins and ensure the fermentation is homogeneous, producing full aromas that develop and deepen with time. Double pressed, blended and aged for an average of 16 months in French oak (medium roasted, fine grain) and American oak barrels from Virginia (more subtle than the typical California oak). Estate bottled.
